I came across this quote while reading my boyfriend's horoscope.  For some reason I find myself interested in other people's horoscopes more than my own.  After deciding the relevance of the Virgo, I prefer to go on to the horoscopes of others.  This quote from reading Leo's astrological forecast resonated with me, which lead me to create some FOOD!  If you enjoy and cherish each day by doing something that you love and makes you happy, I believe you're setting yourself up for a very fulfilling life :)


Carrot Lentil LOVE SOUP



Ingrediants

3 tbl Olive oil
3 tbl Apple cider vinegar
5 cloves Garlic (chopped)
1 Shallot (chopped)
1/2 Red onion (chopped)
1/2 Yellow onion (chopped)
1 Red jalepeno (sliced)
1 Serrano (sliced)
1 cup(leaves) Cilantro
1 tbl Mustard seed
1 tbl Cumin seed
1 teas Tumeric powder
1 can Coconut milk
2 cups Red lentils
6 cups veg broth
3 Carrots (finely diced)
Salt to taste
Pepper to taste
FRESH shaved Horseradish
Greek Yogurt

Heat the olive oil in a large pot. Add onions, shallot, garlic, peppers, and sweat for 3 minutes.  Incorporate vinegar... stir in cilantro, mustard and cumin.  Simmer for 10 minutes.  Add coconut milk and lovingly stir for a minute, then add lentils and broth.  Cover and simmer for 20.  You can serve it chunky or if you are like me and still love blended baby food, use a hand blender or transfer to a vita mix and blend it till it looks like gerber baby food.

Garnish with cilantro, basil, shredded horseradish, and a dollop of yogurt.
